The project entailed the design, documentation, and delivery of a complex-wide grease trap upgrade at Crown Melbourne, addressing critical compliance and capacity issues across approximately 30 existing grease traps that failed to meet current authority regulations.

Key activities included preparing a business case justification for capital works expenditure, conducting thorough audits of the existing installations, and coordinating with a site-wide capital works program that encompassed new restaurants and bars. The project involved redesigning systems and pipework to consolidate traps and pumps where feasible, creating a new identifiable numbering system for easy reference, and designing and constructing new plant rooms to house the traps. These plant rooms included bunded areas, exhaust systems, and integration with the building automation system for alarming purposes, as well as railings to facilitate the removal of submersible duty standby pumps in compliance with occupational health and safety regulations. The project set standards for all new installations to accommodate the future growth of the complex, while regular liaison with authorities was maintained to update progress, secure approvals for non-standard trap sizes, and coordinate outlet testing.
The final connected load for the system exceeded 350,000 litres. Challenges included executing the staged project over two years, managing live cut-overs from outdated systems to the newly designed infrastructure, and navigating the complexities of obtaining approvals from the local water authority for non-standard capacities.
